Gajjar Halwa ( Carrot pudding)..a classic!!


1 lb Organic Carrots
1 gallon Organic whole Milk
1/2 sweet condensed full milk
1 teaspoon Cardamom seeds,crushed
3 tablespoons Ghee
2 tablespoons Raisins
2 tablespoons Almonds
2 tablespoons Pistachios
few cashews
2 Tbsp sugar

  • Wash and grate the carrots. Using a food processor makes it much easier. But people like me who don't have it, can use box grater. It only takes 15 minutes. But be careful , don't lose any flesh!! Keep aside for later use. You can also do this a day ahead and keep it covered in Ice box.
  • Take milk and reduce it to its half the volume by boiling and stirring it constantly.
  • Take a deep skillet, use aluminium if you have one. Heat Ghee in it and fry carrots until they become soft, usually take 7 to 8 minutes.
  • Add the the reduced milk and condensed milk. Cook on a low flame for 1 hour stirring occasionally. Add sugar, mix well and cook till the sugar has dissolved and all the milk has been absorbed.
  • Add a little ghee and simmer for 2-3 minutes. Add the slightly crushed cardamoms and the raisins. Mix well.
  • Remove the gajjar halwa from heat and arrange in a serving dish. Garnish with almonds and pistachios. Serve cold, hot or at room temperature.
Taste even better with Falooda Ice cream or full flavoured vanilla ice cream.
